This very well could be the best recipe ever! Our family loves it so much, and so does everyone else. I've made it several times and have meant to post it on here before but I never manage to get any pictures. The same thing happened again last night. I made it for my family and it was quickly devoured before I remembered that I had wanted to snap a few pictures. I was feeding not only my own teenager boys, but an extra (a total of four teenage boys, plus a tweenage boy, my girls, and my honey). They cleared out my casserole dish so fast I barely had time to steal a bite for myself.
The best part about this recipe is not only how incredibly yummy it is, but also how easy it is to make. It's perfect for potlucks and church dinners and such. It would be perfect to serve on the 4th as it compliments hamburgers and hot dogs so well. You are surely going to love it!
2 lbs frozen hash browns
1/2 cup margarine, melted
1 can cream of chicken soup (10 1/4 oz.)
1 pint sour cream (I use slightly less.)
1/2 cup onion, chopped ( I put more.)
2 cups cheddar, grated
1 tsp. salt
1/4 tsp. pepper
Preheat oven to 350 and spray a 9x13 casserole dish with cooking spray. Mix the above ingredients together and and place in prepared dish. Bake for 45 minutes (or just a little longer) until brown on top.
My son did indeed declare it as "the best recipe ever". So much so, that I copied your recipe and Garrett was treated to an encore performance at our house last night! So yummy!
