A Few Things

First of all let me just say, "thank you".  I'm so glad you are here.  Thank you for reading and thank you for your feedback.  I love hearing from you and I appreciate your comments and emails so much.  As you know, I am not a professional writer.  I carved out this little space to write what was on my heart and to share my loves - The Lord Jesus, my family, homeschooling, cooking, baking and all other aspects of homemaking.  I'm as "imperfect" as all can be.  I've certainly not mastered anything and it is only because of the grace of our Lord that I ever get something right.  HE redeemed my life from the pit.  HE is the reason I can face tomorrow.  It is all because He first loved me!

Last thing - Most of my family was well enough to eat dinner last night so I served them Italian Chicken Casserole.  They devoured it and I have to admit I ate more than I should.  It. is. so. GOOD!  If you haven't tried it yet here's the recipe again.  You may want to try this out on your family this weekend.  It's beyond delicious. 


Italian Chicken Casserole
Makes 6 to 8 servings.

2 tablespoons olive oil
1 cup chopped onion
3 cloves garlic, minced
3 cups chopped cooked chicken
2 (14.5 ounce) cans diced tomatoes with garlic, basil, and oregano
1 cup heavy whipping cream
1 (8 ounce) package cream cheese, softened 
2 cups shredded mozzarella cheese, divided
1 (8 ounce) package angel hair pasta, cooked and kept warm

Preheat oven to 350 degrees.  In a large skillet, heat olive oil over medium-high heat.  Add onion and garlic; cook 3 minutes, or until tender.  Stir in chicken, tomatoes and cream.  Bring to a boil over medium-high heat; reduce heat, and simmer 10 minutes or until slightly thickened.  Add cream cheese and 1 cup mozzarella cheese; cook, stirring constantly until cheeses are melted.  Add pasta, tossing gently to coat.  Spoon into baking dish.  Sprinkle evenly with remaining cheese.  Bake 30 minutes.

  1. About the dating post, it wouldn't come up so I haven't watched the videos, but their is a book called "I Kissed Dating Goodbye". This book talk about dating from a christian perspective. The authors name is Joshua Harris. I hope this is of some help. Have a nice day!

  2. Thank you, Hannah! We have all read that book and Jeff even has the book on cassette tapes. How funny is that?! It's a great book. I'm sorry about the "Should Christians Date" video. That post is under construction and will be up soon. I have a wonderful video to share! How are you and your family? We sure miss seeing you guys! I especially miss talking to your mom. Please tell her hello for me. Thanks again for mentioning the book.
