Slow Cooker Honey Dijon Pork Chops and Apples (and onions too!)

I made this for the family the other night and it is OH. SO. GOOD!  You must try it on your family.  They are sure to love it!

1 1/2 lbs pork chops, boneless
5 small apples, peeled and sliced
1 onion, sliced
3 TBS honey
1 tsp Dijon mustard
1/2 tsp kosher salt
black pepper
1/3 cup apple juice

Place pork chops in bottom of crock pot.  In small bowl, combine honey, Dijon, salt and pepper.  
Pour over apples and onions, toss to coat.  Place apples and onions on top of chops in slow cooker.  Add apple juice.  Cook 7-8 hours on low.



  1. How is Nic doing? I hope his knee is on the way back to normal. OOOoo, it made my liver quiver to read about his injury!

  2. Nic is doing well Elaine. Thank you for asking about him. He will return to the doctor next week for MRI. My liver quivered too when I got to the ER and saw him. It was really bad. The doctor grabbed my arm and said, "Are you okay?". I must have looked funny. Maybe he thought I was going to throw up.
