Fall is almost here and I'm so thrilled! Fall is my FAVORITE time of the year. I love the crisp days and the cozy nights. The colorful leaves, the days getting shorter, the "smell" of Fall in the air, are all things I love. Our family looks forward to the start of a new school year, and we love football and craft fairs, and Thanksgiving. We love hiking in The Great Smoky Mountains and seeing God's vibrant use of color. We love big bowls of chili and sitting around the fire pit roasting marshmallows. We love apple butter and pumpkin pie. We just love all things Fall!
Here is a recipe to get you in the mood for fall - if you aren't already. This is fun to do with the kids.
PUMPKIN SPICE SUGAR COOKIES
There's nothing like homemade cookies fresh from the oven!
2-3/4 c. all-purpose flour
1 t. baking soda
1 c. butter, softened
1-1/2 c. powdered sugar
2 t. pumpkin pie spice
1 t. vanilla extract
1 egg
Combine flour and baking soda; set aside. In another bowl, blend butter and powdered sugar together; add pumpkin pie spice, vanilla and egg. Mix in flour mixture; blend well. Cover dough; refrigerate for 2 hours. roll dough out on a lightly floured surface; cut into desired shapes with cookie cutters. Bake at 350 degrees on ungreased baking sheets until golden, about 8 minutes. Makes about 2 dozen.
