Indulge in a Cozy Comfort Classic


 Chicken Fettuccine

6 ounces uncooked fettuccine
1 lb boneless skinless chicken breasts, cubed
1 small onion, chopped
1 tablespoon butter
4 garlic cloves, minced
1/2 tsp salt
1/8 tsp cayenne pepper
4 1/2 tsp all purpose flour
1 1/2 cups half and half
1/4 cup grated Parmesan cheese

Cook fettuccine according to package directions.  Meanwhile in large skillet saute chicken and onion in butter til chicken is no longer pink.  Add garlic and salt and cayenne.  Cook another minute or so.  Blend in flour.   Gradually add the half and half and cheese.  Bring to a boil.  Cook and stir for a couple more minutes - until thick.  Drain fettuccine and toss with chicken mixture.  
Yield: 4 servings  

*Just a little note I wanted to add - On busy nights when you are pressed for time there is an easy shortcut for delicious Chicken Fettuccine.  Walmart has a really tasty jar of Alfredo sauce (Great Value) that I have used before.  You simply cook your chicken with butter and garlic, boil your pasta and add the store bought sauce.  This makes for a yummy meal in a little less time.
