This is the perfect soup for a cold winter night...warm, cheesy and filling. My family LOVES it.
1 lb. Italian turkey sausage links, casings removed
2 c. onion, chopped
4 cloves garlic, minced
2 c. sliced mushrooms
4 c. chicken broth
15 oz can Italian seasoned diced tomatoes
15 oz can tomato sauce
1 c. bite-sized bow tie or rotini pasta, uncooked
2 c. fresh spinach, chopped
1 c. Shredded mozzarella cheese
1/4 c grated Parmesan cheese
In a soup pot over medium heat, crumble sausage and cook until no longer pink; drain. Add onion, garlic and mushrooms; cook and stir until tender. Add broth, tomatoes with juice and tomato sauce. Bring to a boil; add pasta. Simmer until pasta is just barely tender, about 11 minutes; stir in spinach and cheeses. Serves 6.
I double or triple this, cut up a salad and make garlic bread sticks. It is one of the kids' favorite meals (mine too).
