Eight is Great!



We made this simple little cake for my daughter's birthday.  (During the making of this cake I realized I have a future blogger on my hands.)


Pretty much any time I'm in the kitchen the girls are in there with me.  This is a good thing.  For my big girl's birthday she wanted a strawberry cake, so we whipped one up.

Cracks. us. up.







After the cakes baked and cooled I cut a circle out of the middle of each one.  If you were wondering why the girls were camped out in front of the oven, here's why.  I told them they could eat the mini cakes.

I wrapped the cakes in plastic wrap and put them in the freezer until the next day.  I did this to help with the crumbs.  If you freeze your cake you won't have to fight with the crumbs when you are putting on the frosting.




I don't know if you can see or not but before I froze them I cut a little place out of the cake I would be using for the top of the eight.  The bottom one then fit really snug into the top.  It helped the eight look more like an eight and less like two round cakes sitting next to each other.

All that was left was to put on a little frosting and some sprinkles - you know, the fun stuff!


It was DELICIOUS.
