Chocolate Chip Banana Muffins

Today my little gals and I baked muffins.

By "my little gals and I", I mean this gal baked...


and this gal ate chocolate chips.


If you are in the mood for some yummy chocolate chip banana muffins here's all you need to do.

Mix up your favorite basic banana muffin recipe.
This is the one I use (from Taste of Home).
  • 1 1/2 cup flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 medium ripe bananas
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
In a large bowl combine dry ingredients.  In another bowl, mash bananas.  Add egg, oil and vanilla; mix well.  Stir into dry ingredients just until moistened.  Fill greased or paper lined muffin cups half full.  Bake at 375 degrees for 18-22 minutes or until toothpick inserted near the center comes out clean.  Yield: 1 dozen

To turn your basic banana muffin into something extra special stir in 1/2 cup chocolate chips before baking.





Yummy!

  1. Mmmmmm...yummy! That Olivia is so cool. And Clare is cracking me up in that picture. I'm wondering. What kind of time window do you get when trying to photograph baked goods in your house? One, maybe two minutes, between prettily displayed and practically devoured?

    1. It's funny you say that because before eating anything I bake the boys will ask me, "Mom, do you need to get a picture of this first?". After a couple of years of blogging, taking pictures of their food just seems completely normal to them. :)
      (Clare was cracking us up too. She cried when she finished her little bowl of chocolate chips.)
