Cheesy Enchilada Casserole


My family is always happy to let me try new recipes out on them and I'm so glad.  I tried this Cheesy Enchilada Casserole with them tonight and it was a huge success.  We have decided this recipe goes on the FAVES list.  If you try it, you will love it!

1 1/2 lbs lean ground beef
1 large onion, chopped
2 1/2 cups salsa
1 15 oz can black beans
1 1/4 cup frozen corn
2 Tbsp taco seasoning
1/2 cup sour cream
6-8 8inch flour tortillas
1 14 oz red enchilada sauce
2 cups shredded Colby Jack cheese
Any toppings you like - lettuce, tomato, cilantro, onion

Preheat oven to 400 degrees.
Grease a 9x13 casserole dish.
Cook meat and onion in large skillet, drain grease.
Stir in salsa, black beans, corn, taco seasoning and sour cream.
Spread 1/3 of the mixture in bottom of dish.  Sprinkle 2/3 cup cheese.  Layer with 2 tortillas.  Pour 1/3 of the enchilada sauce over top.  Repeat layers.  End with tortilla, last 1/3 of enchilada sauce and shredded cheese.  Cover with foil and bake for 25 minutes.


  Serve with toppings.

  2. That's what's for dinner tonight at my house! I use chicken instead and cook it all day in the crock pot with the beans & corn and onion & salsa & any other "mexican" stuff I need to use up. Then layer it with the tortillas, cheese & enchilada sauce and bake.
    YUMMY! Delish and EASY!
