Chicken Salad

I usually only make Chicken Salad in the spring and summer but my honey and kiddos were begging me to make some the other day so I did.  My sweet friend Teresa made this at my house many years ago when she and her family were visiting.  Since that time my family has been hooked.  We love it!

Here are the basics...

Wash and chop up celery.


Chop onions.


Boil chicken, let cool and chop up, or use canned chicken and drain.

Mix celery, onion and chicken together in large mixing bowl.

Add mayonnaise to your liking.  I do several big spoonfuls.

Add a little salt and pepper.

And grapes.

Stir everything together and put into serving bowl.

All done!  YUMMY!

For a simple meal, we eat the chicken salad on croissants with crackers.  This is a family favorite around here.

  3. Hey Amanda! Yes, those are your knives. As you know I got them for Christmas. I LOVE THEM! You should have seen all the bandaids I was wearing on my hands the first few days after Christmas. Those things are sharp!
