Best Ever Blueberry Muffins

Happy 4th of July everyone!!  I hope you are making special family memories today!
At our house, special family memories often involve food and I must say we've been doing a lot of eating this weekend.... fried chicken, potato salad, watermelon..... And since our blueberry picking was a success we've been eating a TON of blueberries.  We've made blueberry pancakes, and blueberry muffins, and had lots and lots of blueberries for snacking.

This morning for breakfast I made The Best Ever Blueberry Muffins and I'm happy to share the recipe.  They are the yummiest!  The crumb topping makes them super delicious and unfortunately we will never be able to eat a package of Martha White muffin mix ever again.  (sorry Martha.)

THE BEST EVER BLUEBERRY MUFFINS

INGREDIENTS:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 tsp salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 tsp ground cinnamon
DIRECTIONS:

1.  Preheat oven to 400 degrees.  Grease muffin cups or line with muffin liners.

2.  Combine 1 1/2 cups flour, 3/4 cups sugar, salt and baking powder.  Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.  Mix this with the flour mixture.  Fold in blueberries.  Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

3.  To make crumb topping:  Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon.  Mix with fork, and sprinkle over muffins before baking.

4.  Bake for 20 to 25 minutes in the preheated oven.

  1. Onne word. YUM!!! We actually just went blueberry picking this morning at our aunt's house. Mom said she would have to find a recipe for blueberry muffins. Well, I guess we found one! :)

    Oh, and I told Colin I HAVE to hold Clare soon... ;)

  2. Those look great! Would love to go blueberry picking. We did strawberries a few years ago and would have went again but the place closed down. The kids loved the picking and eating and still talk of it. All I remember is the heat and being 37 weeks pregnant picking strawberries at 2:00 in the afternoon, CRAZY!!!! I think I will do a google search of blueberry picking and see what I come up with. We will be trying your recipe. Thanks a bunch!!!!

  3. Stephanie, I made these muffins last week with some fresh blueberries, and they were great! I added 2 T of lemon juice, because I almost always add lemon when I am cooking with blueberries. Would you mind if I shared the recipe with some people?

  4. Elizabeth, I am soooooo happy to hear from you and yes, you can certainly share the recipe. I heard from some friends in VA that you are married now...CONGRATULATIONS! I can see from your picture that you made a BEAUTIFUL bride. Are you living in the NRV?

  5. Aww, thank you! Yes, Andrew and I are living in Radford right now, but hopefully for not too much longer! He is going to be Border Patrol agent, so right now we are just waiting on a phone call to move out west.
