More Menu Planning

Have you been working on menu planning?  I have!  I'm working on planning meals for the entire month of February and making a shopping list so I can buy everything at one time.  I'm sure there will be a couple of trips to the store during the month for milk and maybe bread but I'm going to try to make a 30 day menu and do one big shopping trip.  My goals are to simplify, spend less, and cook more from scratch.  Also, our family is trying to not eat out in an effort to save money and eat healthier.

 I have found a great place to print blank calendars and I have already filled one up for February.  If you would like to print your own click here:  pdfcalendar.com  Even if you do only a week's meal planning at a time it is helpful to use one of these blank calendars.  I hang my completed menu on the fridge and everyone can see what's for dinner.  (A question I am asked many times a day!)

Here is a scrumptious recipe that is on my February menu plan.  Maybe it will help you get started with your planning!!

Spinach Ravioli Bake

2 cups spaghetti sauce
1 package (25 oz) frozen ravioli
2 cups (8 oz) shredded Mozzarella cheese
1 package frozen chopped spinach, thawed and squeezed dry
1/4 cup grated Parmesan cheese

Place 1 cup spaghetti sauce in a greased 2 qt. baking dish.  Top with half of the ravioli, Mozzarella cheese, spinach and Parmesan cheese.  Repeat layers.  Bake uncovered at 350 for 40-45 minutes or until heated through.

I usually serve this with a salad and garlic bread.  Everyone loves it!

  1. Hey, I make this also. It is very good. A great way to get kids to eat their spinach. Easy to make too. Like your idea of making a monthly menu. It is so hard when the boys are playing ballgames throughout the week. Looking forward to getting back on a normal schedule. Take care and hope to see you soon.
