I love t...Thank you for the Rice Casserole recipe. I love that! We are trying to do one, or sometimes two, meatless dinners each week. Over the summer I did "Meatless Mondays". We stuck to that most of the time. Some of our favorites are salad bar, vegetable soup with homemade bread, pinto beans and cornbread, and veggie plates. I am just beginning to implement meatless night for us. Our go-to is rice casserole and crowder peas. Yum!<br /><br />Rice Casserole: 1 Cup rice, 1 can beef consomme', 1 can water, 1/2 to 1 stick of butter sliced, onion flakes. Put rice, consomme' and water together in small, deep, baking dish, sprinkle onion flakes and place butter slices on top (floating.)
